Cotechino is made up of noble parts of the pig and rind, as required by tradition. The meats, from Italian pigs, are minced and delicately flavored with spices and aromatic herbs (cloves, pepper, nutmeg, cinnamon and wine) and then stuffed into casings. The precooked product is packaged in airtight bags and subjected to heat treatment at high temperatures for a time sufficient to guarantee its organoleptic stability. Cotechino does not contain gluten.

Rustichella d'Abruzzo has also thought of the most demanding foodies who find Tagliatelle to be a fundamental type of pasta, creating the jagged-edged “capricciosa” version, which allows the condiment to stick perfectly to the pasta. We recommend it with our ‘alla Bolognese’ or ‘alla Genovese’ sauces, or with ‘Porcini Mushroom’ cream, with a bit of Rustichella PrimoGrano INTOSSO monocultivar Extra Virgin Olive Oil. Cooking time: 4-6 minutes.

Peach and Apricot are the summer fruits par excellence. Apparently, Chinese emperors used to consume them already 4000 years ago. Originally from Central Asia, these fruits were brought to the Mediterranean area after the conquests by Alexander the Great. In ancient Egypt, they were sacred fruits to Arpocrate, god of silence and childhood: in fact, children’s cheeks nowadays are usually compared to these fruits, for their velvety softness. After a period of oblivion, Arabs reintroduced their plantation, for gastronomy and pharmacological use. Many famous artists such as Caravaggio, Renoir, Arcimboldo and Monet often painted them in their works, thanks to their beauty and colour. Cooking time: 13-15 minutes.
Rustichella d’Abruzzo proposes Pappardelle al Limone, made with top quality durum wheat semolina, fresh eggs and lemon juice added to the dough, bronze drawn and slowly dried at low temperature, in order to obtain an incomparable texture. The perfume of lemon mixed with the one of eggs will conquer you right after opening the packaging. We recommend it with a boar meat ragù, mullet’s eggs, truffle slivers and a bit of Rustichella d’Abruzzo PrimoGrano INTOSSO monocultivar Extra Virgin Olive Oil, or with our ‘Ragù bianco alla Salsiccia’ with fresh radicchio and a bit of Abruzzo Pecorino cheese. Cooking time: 4 minutes.
Anise is the ingredient that is never missing in Abruzzo desserts. Tradition has passed on its use in the doughs of ciambelloni, ferratelle and even combined with coffee. La Zunza is an artisanal sweet anise with genuine products like eggs, sugar and flour. The term "Zunza" is most likely to be connected to a root of the Arabic language, filtered by the Spanish dialects, which links the word to the concept of nectar. The characteristic flavor is given by the contrast between the sweetness of the dough and the freshness of anise. Outside the Zunza is covered with almonds. Excellent with creams, sweet wines and liqueurs.

Produced through the same bronze dies used for the Paccheroni Rigati, Rustichella d'Abruzzo proposes the Maniconi, a shape of the same diameter, but half the length of the classic Paccheroni. Perfect to collect any condiment thanks to its roughness and the ridging on the surface, Maniconi is excellent when combined with seafood and crustaceans for a typical Mediterranean-flavoured first course. Rustichella d'Abruzzo suggests to enjoy this shape with a classic recipe of Rome's gastronomy, such as "Cacio e Pepe" or with a "Funghi Porcini" sauce or, why not, a delicious "Ragu bianco" sauce, all by Rustichella d'Abruzzo. Cooking time: 13-15 minutes.
Speciality of PrimoGrano line, the local type of tomato called “Pera” (pear) grows in Abruzzo. It is unique and very different from all the other varieties of tomato. It has been cultivated for centuries and has very few seeds, it is very fleshy and weighs about 300-500 g. It is particularly suited for the preparation of sauces and its sweet and velvety taste, together with its low acidity, makes it much more refined than all other common types. To enjoy its organoleptic properties, we recommend using it “raw”, pan-frying it together with pasta and adding just a little bit of PrimoGrano INTOSSO Extra Virgin Olive Oil with some perfumed basil leaves.
100% Chardonnay. During the tasting yes they reveal hints of spices, ginger, pear and of toast. A rich and elegant taste, perlage subtle and persistent.
Half-cylinder-shaped, this short pasta is ideal mainly in legume-based soups, vegetable soups, or the traditional recipe "Cacio e Uova". It also matches Rustichella d’Abruzzo "pesto alla Genovese" or "crema ai Carciofi" sauces with the addition of almonds. Cooking time: 10-12 minutes.
